I have a 2002 starboard go (170), what is the proper method to go about getting water out from inside the board? What damage have i done to the board in this instance?

This URL will lead you to some instruction on drying a board.

Best way I know to remove water in the core of a board is to remove the vent plug completely, make a "wick" from paper toweling, set the board in the sun (deck side up) and over a period of time, allow the "wick" to absorb as much water as possible.
The heat of the sun will cause the water in the board to bubble up to the vent fitting, and the wick will remove it.
If you have access to a vacuum pump, with a regulator, drawing a partial vacuum on the vent plug fitting will lower the pressure inside the skin of the board and the water/water vapor will be drawn out.
Follow Eva's advice on this. Don't draw a full vacuum as this can cause the board to "implode".
And, since you have some water in your board, you need to store it with the vent plug out in a warm and dry area as much as possible.
Cycle the vent plug open as the board warms up each day. closed in the evenings as things cool off.
Hope this helps,
