I think the Carve 133 would be good. A friend of mine has one and it's a great board. At your weight and experience you should be able to uphaul it with a little practice, but tacking might be hard
You should probably look for the spots in the gorge with less wind and flatter water while you're learning. Using a smaller sail and fin and putting the straps more toward the center of the board might help you stay comfortable in stronger winds.
