I just saw some video of me sailing. It appears that my boom height was way too low. Generally, regardless of sail size after rigging on dryland, I would set boom height below my pectoral muscles, assuming appx 6 inches of base and universal to take it up to shoulder height. I would be happy to hear a better and or correct way to set boom height.

Hi Rob,
Not sure there is any "correct way" to chose boom height. With different size sails, boom height changes. For different windsurfing "disciplines" (waves, bump and jump, slalom sailing, slalom racing, formula racing, freestyle,,,,etc.) the optimum boom height will change. Formula racers, on huge 9.8 m2 + rigs run their booms at nose or even forehead height to get the best leverage and balance. Slalom racers run their booms lower more around shoulder height. You need to move your boom up and down a ways and find out where you are comfortable and fast, with your rigs, your boards, and your individual sailing style. below the top of the shoulder would usually be considered quite low.
